The Story:
It was a Wednesday evening after a long day — work, kids, dinner done. I wanted something sweet but I didn’t want to completely derail the healthy choices I’d been making all week. I’m a 5am workout girl, I take my health seriously, but I’m also human and sometimes you just need chocolate.
That’s when I remembered the Fiboli Chocolaah packet sitting on my counter. 12 grams of fiber, plant based, real cocoa. I thought — what if I could make something that felt indulgent but was actually doing something good for my body?
So after the dinner dishes were cleared I started experimenting in the kitchen. No fancy equipment, no food processor — just me, a bowl and a spoon. The house smelled like peanut butter and chocolate and honestly my family came wandering in one by one asking what I was making.
I pressed the mixture into the pan with a spoon, drizzled the dark chocolate over the top, sprinkled the sea salt and popped them in the freezer. 15 minutes later I cut them into bars and tried one.
Crunchy from the oats. Peanut buttery and rich. The Fiboli Chocolaah added this deep chocolatey warmth that made them taste far more indulgent than they actually were. The chia seeds added a subtle texture and the sea salt on top just finished everything perfectly.
I left them on the counter before bed.
The next morning my husband had already been into them before leaving for work. He texted me from work: “I stole some of your amazing bars”.
Annie’s Steal-Worthy Chocolaah Protein Bars
Makes 16 bars:
¾ cup all natural crunchy peanut butter
½ cup pure maple syrup
¼ cup coconut oil
2 cups rolled oats
¾ cup vanilla protein powder
1 packet Fiboli Chocolaah
¼ cup 70% dark chocolate chopped
¼ tsp sea salt
1/4 cup of water as needed
Method:
- Line a baking tin with parchment paper and set aside
- In a small saucepan warm your peanut butter, maple syrup and coconut oil over low heat. Stir gently until everything melts together smoothly. Remove from heat and let it cool slightly
- In a large mixing bowl combine your rolled oats, vanilla protein powder and your full packet of Fiboli Chocolaah. Give everything a good stir with a spoon until fully combined
- Pour your warm peanut butter mixture into your dry ingredients. Stir with a spoon until well combined. If the mixture feels too dry add water little at a time until it holds together nicely when pressed
- Press the mixture firmly into your lined tin using the back of your spoon. Pack it in evenly — the firmer you press the better your bars will hold together
- Melt your dark chocolate in the microwave in 30 second intervals stirring between each until just melted and smooth
- Using a fork drizzle the melted chocolate over the top then finish with a generous sprinkle of sea salt flakes
- Pop in the freezer for 15 minutes until set
- Slice into 16 even bars
- Store in the fridge for up to 1 week or freeze for up to 3 months
